My version of Tiktok Pasta


I'd been meaning to try it since it first popped up on my Instagram feed. And I’ve been meaning to share it since I made it because it was AMAZING and perfect if you’re struggling with figuring out what’s for supper once again. I'm calling it tiktok pasta because that’s what the viral posts called it- but I don’t even have tiktok. Maybe I should though-if this kind of magic is what’s happening over there.


A couple of notes-

1. I’m not a food blogger- I just have to show you this amazing thing so don't judge my crappy iPhone photos or recipe k thanks.

2. The original is made with feta and is not vegan. There are versions out there with vegan feta I found by googling vegan tiktok pasta.

3. I was in the middle of small town TN and was blessed to find Mooneys Market which had Miyokos Mozz but no feta… this is what I will use forever more for my version. (If you're ever in Sewanee go to Mooney's, it's adorable!)

4. I made this again with my 18 year son while we binge watched Ted Lasso, so I’m going to suggest you download the Ted Lasso Apple playlist while you prepare this and follow suit.


Here’s what you need to buy:


1 package Miyoko's Mozz

1 container of cherry or grape tomatoes

1 bunch of fresh basil

1 box of penne pasta (or your favorite shaped pasta)


You’ll also need

Olive oil

Salt and pepper

Garlic

Italian spices

A deep 9x13 baking dish


Preheat your oven to 400.


Wash the tomatoes and dump them in the baking dish. (I just use the container as a colander)


Drizzle with olive oil. Season with garlic, salt, pepper, and Italian spices to your liking and mix around. Make a little well in the middle and place the unwrapped mozz in the middle of the tomatoes.


Bake for 25 minutes or until the mozz is brown on top and bubbly.


While the cheese bakes make your pasta according to package instructions and drain, set aside.

Wash and chop as much basil as you like, set aside.


Turn up your playlist and wait. When your cheez is brown and bubbly- pull it out of the oven- be careful not to burn yourself- mix it around until it’s gorgeous cheese sauce and add the pasta a bit at a time until its freaking perfect. Garnish with the basil and more salt and pepper to taste. You’re welcome yall.


Go turn on Ted Lasso and savor every bite of this. And the show.
