Taco Tuesday: 21 Day Fix-ed (Vegan)
Never again will I wonder what to make for dinner on Tuesdays. Taco Tuesday has stuck in our house and I’m totally okay with that! It’s easy and we can always get creative so boredom doesn’t set in, and I have to admit I really like ‘leftover taco salad Wednesdays’-not as catchy, but it’s a thing at my house.
For those following the 21 day fix meal plan, tacos are a great choice, and it’s very easy to customize for whatever containers you have by suppertime.
Am the only one who looked at those containers when I opened my challenge pack and said "yeah right- these things are TINY!"? But I swear you can cram so much goodness into those things! I was pleasantly surprised. So here's my dinner from this past Tuesday with a breakdown of the containers I used... It's a full sized dinner plate!
Lettuce/tomato = 1 green
Vegan ground = 1 red
Refried beans/corn = 1 yellow (beans =1 red for vegans, so score!)
Salsa= 1/2 purple
Avocado= 1 blue
You can switch up the protein (red container), add lots more veggies for more greens, and if you have any yellows hanging out add some rice or a tortilla! (But who has yellows hanging out by dinnertime anyway? Not this girl haha!)
Oh and here’s a tip- make your own taco seasoning! That way you can make it Fix friendly and you don’t get the extra junk that are in the store bought packets.
Here’s my recipe- use this for one pound of protein, add half of the recipe first and taste just to make sure you don’t over season.
• 1 tbsp chili powder
• 1 1/2 tsp cumin
• 1 tsp pepper
• 1/2 tsp paprika
• 1/4 tsp onion powder
• 1/4 tsp garlic powder
• 1/4 tsp oregano
• 1/4 tsp crushed red paper flakes (If you like a little bit of heat, I leave this out)
