Vegan Pumpkin Spice Latte
One of my fall bucket list items: homemade vegan pumpkin spice lattes!
I tried the Starbucks PSL before I went vegan a few years ago and loved it! If Fall were a coffee drink, the PSL would be it. Unfortunately the Starbucks mix has milk in it (even if you choose soy milk) so it's not vegan & while I hear they've cleaned it up some this year the ingredients list didn't give me a warm fuzzy so I decided to make my own.
Here's my recipe for the pumpkin mix:
1 cup non-dairy milk 1/4 cup pumpkin purée (heaping for me) 2 tsp pumpkin pie spice 1tsp cinnamon 2 tbsp pure maple syrup (or to taste) 1 tsp vanilla
Blend everything together w a blender or stick blender. Heat in the microwave for 30-60 seconds.
Brew your favorite coffee, the stronger the better. Fill your cup halfway & then top off with your pumpkin mix. I save my leftover portion in a mason jar... Ahhh fall!!!
